Now you bring the stock, thyme, bay leaf and 2 cups water to a boil over medium high heat. Reduce the heat to medium-low and simmer for 20 to 25 minutes, stirring occasionally and checking how hot the thickest part of the breast is.
Now you cut the chicken breasts and transfer them to the board. Cook the black meat for about 40 minute once cook, transfer the black meat to a cutting board and let it cool for about 10 minutes. Remove skin and bone and discard. Cut the chicken into bite-sized pieces.
Through in the thyme and bay leaves. Cook onions, carrots and celery over medium low heat adjusting heat as needed. This will take 7 to 8 minutes, stirring occasionally until just tender.
Add the chopped chicken and pepper and 2 tablespoon of salt (as needed) and stir.
Divide soup between bowls. Top with parsley and more pepper.
Place in an airtight container and refrigerate and taste from time to time.
